Guava lime granita in a cup with a wedge of lime

This year, I am leaning into a summer of no-bake recipes. It’s just too hot. The idea of turning on the oven fills me with dread. And yet, I’m still looking for a refreshing treat that will momentarily dispel the heat and return me to my happy place. So I have decided that this will be the summer of sorbets, ice creams, fools, granitas, and whatever other no-bake desserts I can dig up.

I’m starting off strong with these guava lime granitas. Because guava-flavored foods are pretty hard to fine here, the second I add guava to a dessert, I feel like I’m in a tropical paradise. I thought I’d capitalize on that in this no-bake dessert to not only refresh me but perhaps transport me somewhere else. It certainly can’t hurt, right?

This granita is incredibly easy to make and unbelievably refreshing. Granitas are essentially either fruit juice or fruit puree combined with a sugar syrup. That mixture is frozen and scraped periodically with a fork to create a granular texture that melts onto your tongue. Because guava is a very sweet fruit, I chose to make the sugar syrup with a lower concentration of sugar and infuse it with ginger, for a little bite. I also added a generous portion of lime juice to lift the guava flavor and balance the dessert. I used 100% guava juice for this to control the sweetness to my liking, but if you’re unable to find that, you can try making it with guava nectar and omitting the sugar syrup. It’s a pretty versatile recipe so feel free to play around with it and find the right combination for you.

This no-bake guava lime granita is light and refreshing for a hot summer’s day. A hint of lime and ginger round out the sweet guava for a perfect, ice-cold summer treat.

Ingredients

  • 1 cup water

  • 1/3 cup (67g) granulated sugar

  • 1 inch of ginger, peeled and thinly sliced

  • 1 1/2 cups 100% guava juice (see note)

  • 1 1/2 Tbsp lime juice

  • pinch of salt

Instructions

  • In a saucepan, stir together the water, granulated sugar, and ginger. Bring to a simmer, turn off the heat and steep for about 20 minutes to infuse the ginger flavor.
  • Strain out the ginger and pour the mixture into a metal pan with good surface area, such as a 9×13″ baking pan, a large pie plate, etc. The thinner the layer, the faster the mixture will freeze. Aim for something that won’t make the mixture pool deeper than 1 – 1 1/2 inches once you have added the rest of the liquid.
  • Pour in the guava juice and lime juice and add the salt. Stir to combine.
  • Place the pan in the freezer for 45 minutes. Then scrape the surface with a fork to break up any frozen bits. Continue to freeze and check on it every 30-45 minutes, scraping, until the mixture if fully frozen and broken up into small granules, 3-4 hours in total.

Notes

  • If you can’t find 100% unsweetened guava juice, you can try to use guava nectar and not make the sugar syrup. You could infuse the ginger directly into the guava nectar.
